Ritz Cracker Chicken Recipe

Thank you for all the love regarding the post about my dad.  It felt really good to tell his story, and I'm so glad you all enjoyed it.  Sorry I made most, if not all, of you cry.  Unfortunately, it comes with the territory.  

But Dad wouldn't want us crying over him.  He'd want us to laugh.  This commercial always makes me chuckle, especially the little boy who says that a certain food looks like dirty socks.


Here is a recipe for some chicken that DOESN'T look like dirty socks...or taste like them, for that matter.

Ritz Cracker Chicken Recipe

Ingredients:
2 large chicken breasts (or breast tenderloins, no more than 1 lb.)
1 egg
2/3 cup milk
1 sleeve Ritz crackers
onion powder, to taste
paprika, to taste

Gather your ingredients and preheat oven to 350 degrees.  If you are using full chicken breasts, you can either leave them whole, or slice them.  Cut them into chunks for a more chicken-nugget-y look.


Cover a large cookie sheet with tin foil, then spray lightly with cooking spray.

Beat egg and milk together in a small bowl.

Then crush Ritz crackers and put them in another bowl.  In the past, I've put the crackers in a Ziploc and crushed them with a can of soup.  But this time I decided to use my potato masher in a bowl.  Worked like a charm, and I didn't have to waste a Ziploc bag.

You want the crackers to be finely crushed, but they don't need to be super fine.

Set up your chicken, milk/egg mixture, crushed crackers, and cookie sheet fairly close together, as this next steps can be messy.




Dip chicken in milk/egg mixture, fully covering the piece of chicken.

Then dip chicken in crackers.  Turn chicken in crackers to cover on both sides.

Place on cookie sheet, and repeat with remaining pieces.

Now sprinkle chicken pieces GENEROUSLY with onion powder and paprika.  

I was not generous enough with this batch.

Bake chicken for 35-40 minutes, until chicken is cooked through.

Serve with your choice of sides.  This time, we enjoyed a garden salad and some lumpy mashed spuds.

Dip in some bbq sauce (Sweet Baby Ray's is my fave), ketchup, or honey mustard (or whatever other dipping sauce you prefer) and MMMMMM, you've got some yummy chicken in your tummy!

Full disclosure: Leftovers are still yummy, but a bit soggy.  Still delicious, nonetheless.
